Herbal tea (an infusion)
The gentlest way to take leaves and flowers. Hot water pulls out the flavour and the lighter oils.
Steep in hot water10 minutes, makes 1 cup
You need
- 1 to 2 teaspoons dried herb, or 1 tablespoon fresh
- 1 cup (8 oz) of water just off the boil
- A mug with a saucer or lid, and a strainer
Makes 1 cup.

Steps
- Put the herb in the mug or a tea ball.
- Pour the hot water over it.
- Cover the mug. The lid keeps the fragrant oils, which do much of the work, from floating away in the steam.
- Steep 5 minutes for a light cup, up to 15 minutes for a stronger one. Long steeping can turn some teas bitter.
- Strain, and add honey or lemon if you like.
Keeping it: Drink it fresh. Leftover tea keeps a day in the fridge.
Be careful: Tea is mild, not harmless. Hibiscus can lower blood pressure along with medicine; chamomile is a ragweed-family plant. Check each herb's sheet first.
